The asterisk used by FamilySearch is for "Recently added or updated." I am particularly interested in new collections, for the obvious reasons. FamilySearch does provide a listing of which collections are new or updated several days after my post.
My friend, Marshall, has come up with a way to determine which collections are ADDED or UPDATED, in addition to which collections were removed. My thanks to Marshall for helping me out here!
In order to select a specific collection, go to https://familysearch.org/search/collection/list and use the "Filter by collection name" feature in the upper left-hand corner.
Each one of the collections listed above has a Research Wiki page (use the "Learn more" link). It would be very useful if the Wiki page for each collection listed the dates for when the collection was added as a new collection and the dates for major updates also.

As I found out, the updated collections on FamilySearch (and probably Ancestry) may mean there are fewer records rather than more.
I had found a marriage record in the "Nebraska Marriages 1855-1995" collection in 2013 that named the parents of the bride and groom. Yesterday when I went to look at the record again to see if they had acquired an image, the record was gone. When I went to the Wiki, it said that at the request of the Nebraska archives, parents were no longer shown on the marriage records, but a certificate with that information could be ordered from Nebraska Vital Records for a fee. I sent a message asking if some records were also being removed and gave my example, along with the the previous url where it had been found. The marriage date was 1911, so I wouldn't think it would be 'recent marriage' that would not be displayed. I haven't had a reply yet.
This is the reply I received from Family Search support regarding my inquiry about the missing marriage record:
We understand you are questioning changes in the Nebraska Marriages, 1855-1955. It does look like this is one of the results that has been removed entirely. Due to legal and contractual agreements many of these records have been removed. The State of Nebraska has legal ownership of these records and we are bound to adhere to their restrictions. You are able to borrow the microfilm number 1954015 to your nearest Family History Center for viewing. To find your nearest center scroll down on the main page of familysearch to 'find a center' and put in your zipcode. Or you may go online for more information - Nebraska State Historical Society website http://www.nebraskahistory.org/lib-arch/index.shtml. We hope this information helps and wish you well with your research.
